I made Sesame Soba Noodles for my lunch this week, with some minor tweaks:

Red miso instead of white (it’s what I had on hand).
Cilantro instead of mint (my supermarket wasn’t stocking the latter).
Added a pound of marinated and quickly sauteed tofu for extra protein.
