The tomatoes are reddening in my garden. One plant, zillions of tomatoes. I am impressed. And I need to weed like a maniac.
I don’t normally like salad, but I like the salad I am eating right now. It features tomatoes. Perhaps you would like the recipe?
OMG Tomatoes Salad
- 1 red, ripe large tomato, chunked
- 1/4 large cantaloupe, chunked
- arugula, big handful, washed and ready
- 2 sliced prosciutto, super-thin, shredded
- shaved parmesan (use the good stuff)
- 4-5 fresh basil leaves, shredded (optional)
- olive oil (use the good stuff)
- red wine vinegar or lemon juice
- salt and pepper
Combine everything through the parmesan and toss. Drizzle with olive oil and acid of choice. Salt and pepper to taste. Fork recommended for eating. May also want bread for sopping up stuff.
There’s no romaine or iceberg in this salad, which may also be why I like it. If you can’t find arugula, you could probably use baby spinach or watercress, though I find the latter overpowering in large quantities, and the former is too boring for me.
It’s immensely rewarding, though, to walk into your backyard before heading to work and picking a couple tomatoes for lunch. Yum.

That salad sounds really yummy. I never would have thought to pair cantaloupe with tomatoes, but it sounds good.
If your tomatoes continue to take over, try dicing a few and tossing in a large bowl with chopped, fresh basil, a little sea salt, a drizzle of olive oil, and some fresh mozarella. Add hot, cooked pasta and toss. SO yummy.
